1 large turnip | 1 clove garlic, smashed with knife |
1 ⅓ cup milk | &frac13 stick butter, cut into small cubes |
1 fresh thyme sprig | Salt and pepper for seasoning |
Combine the turnip, milk, thyme, and garlic in a medium saucepan. Set over medium heat and partially cover the pan. Bring to a gentle simmer and cook until turnip is tender.
Drain turnip, reserving the cooking liquid, and transfer to a food processor, discarding the thyme. Add enough liquid for desired consistency and the butter, season with salt and pepper and purée until smooth. Serve hot
